Packed with gelatin and flavour, this is nose-to-tail cooking at its finest.
Cooking Tip:
Slow-roast at 150°C for 4–5 hours until the meat is tender and the skin is crisp. Great for shredding into tacos, soups or terrines. For stock, simmer for 3+ hours with aromatics.
